Today I am showing you some healthy vegan dinner ideas that are perfect for spring or summer. These recipes are super fresh and light, but packed with nutrients and delicious ingredients. Recipes below as always πŸ™‚

Avocado Corn Salsa:
1 cup corn
1 medium tomato, diced
1/2 avocado, diced
1/4 cup red onion, finely chopped
1 tbsp liquid sweetener such as maple syrup, agave
1 tbsp lime juice
hot sauce to taste

2 portobello mushrooms cooked with soy sauce and pepper
handful of kale, washed and chopped
tortillas or taco shells
avocado corn salsa (recipe above)

Lentil Sloppy Joes
2 cups cooked lentils
1/2 white onion, chopped
2 cups tomato sauce
1 tsp vinegar
1 tbsp lime juice
1/4 tsp pepper
1/2 tsp chilli powder
1 tsp smoked paprika
2 tbsp coconut sugar

Simple Coleslaw:
1 cup shredded lettuce and carrot
1 tbsp vegan mayo

Lemon Tahini Bowl:
raw veggies
sesame seeds
green onion

Lemon Tahini Sauce:
2-3 tbsp tahini
1 tbsp lemon juice
1 tbsp sugar or maple syrup
1 tbsp soy sauce
water if needed to thin it out

In this video, I’m showing you everything I ate on a day where I wanted to start fresh, nourish my body in a loving way with healthy, whole, simple, vegan foods and reset my system.

This is not a miracle cure for weight loss, but eating this way helps me feel really good and full of energy. When I eat this way consistently my weight is never an issue and I have almost no cravings.

It’s been a long (wonderful) month of vegan indulgences for me, so I’m excited to eat fresh and start feeling good again! Let me know if you’re in the same boat!

Vegan Smoothie Recipe

ripe banana
frozen berries
pitted medjool date
hazelnut milk
grond ginger

No exact measurements here but I can try to make a full on recipe for this and all of the food I ate in this video if you want! Let me know in the comments πŸ™‚


Sweet Potato
Ground cumin

Mixed lettuce + spinach, chopped
red onion
artichoke hearts
sweet + hot peppers (these are from Trader Joe’s)
salt + pepper

Quick Vegan Lentil Soup

1 large carrot
1 large stalk of celery
garlic clove

cayenne pepper
black pepper
soy sauce ( I use like 2-3 tsp)
water (about 3/4 of a cup)
veggie broth (about 1 cup to 1.5 cups)

optional: potatoes and brocoli. Steam potatoes for a few minutes until almost fork tender, then add broccoli. Drain water and return to pan with a tiny bit of coconut oil, salt, and pepper. SautΓ© until crispy on edges. I actually like doing this sportily because the potatoes get crispy and the broccoli flavor doesn’t overpower the soup. I find that when I cook it all together, the whole soup tastes like broccoli. Try it this way if you have time. It can be done while the soup is cooking πŸ™‚

For the soup:

Bring to a boil, reduce heat, cover, simmer for 20 minutes until lentils are soft and veggies are tender.

Again, this isn’t an exact recipe but I can make one for you if you’re interested!

  1. In the fresh corn tacos, is there something I can replace the mushrooms with? Me and my family are doing a cook your meals for the family week and I really want to do a vegan meal and the tacos look really good but none of my family likes mushrooms including myself. My dad is completely for meat and my mom used to be a vegetarian before she met him and going vegan has really interest me. I could use some advice. Thanks!

  12. That salad needs olive oil, lots of it, and vinegar. Greek yogurt is another great option for a dressing.
    And some tuna and hard boiled egg for the protein.

I have started a vegetarian diet since New Year and I am wanting to progress into becoming a vegan but I'm really struggling to find a variety of different meals to make daily and I don't want to miss out on any nutrients I require as I do workout daily.   16. So glad I found your channel. Transitioning to the vegan lifestyle and I love it!! I ditched my microwave for a convection toaster oven to ensure my nutrients are not being destroyed. You should look into it if you haven't already.
